Man 2. Man 1 saw two diff color hats so he cannot be sure abt his hat color. If Man 1 not shouting, Man 2 will know the color of hat for Man 3 is diff from his. Therefore he is certain that his hat color is red.

The idea is to understand that because the number of boys remains the same, the 2 units in the 'before' situation will form 1 unit in the 'after' situation. The other questions that you have posted are similar to this.
