SA(1) exam qn: How would you interpret the phrase “the rest of $1750”? Would it mean “the remaining $1750” or can it be read as referring to the remainder $1750 (which seems grammatically wrong) 1/8 of which was spent on transport and the rest of which was spent on food”.

$1750 is an absolute amount so it means $1750 spent. If it is a fraction then it matters what's the base that the fraction is referring to. For this it's just $1750. After his savings, his spending on phone and transport, he's left with $1750. That's what it's trying to mean.
